Phew that was a fast week of mostly* healthy eating. I’ve been good with workouts and did a 4.6 mile run on Saturday at just under a 10 min pace. Those hills are killer!
I gotta make sure to get at least a 5 miler in before the Awesome ‘80’s 10k in November. Although, I think my team will be focusing more on the costumes than the race ;)
Also…pumpkin totally counts as a veggie, right?
Sunday: Whole wheat pizza with lotsa veggies
Monday: Leftover pizza
Tuesday: Crockpot Turkey White Bean Pumpkin Chili
Wednesday: Leftover chili
Thursday: Baked Falafel with a side Salad
Friday: Dinner with coworkers (aka a ‘non-official’ work dinner)
Saturday: BBQ at my friend’s place
*Mostly if you ignore the cider + pumpkin cupcakes I made for my friend’s birthday on Saturday

Holy crap you guys…it’s OCTOBER.
I somehow missed an entire month of menus.

I promise to try and get better….September somehow got super busy and I ate out away more than I should have. It’s amazing how a couple of weeks of crap can impact the way you feel. I’ve made an effort the last few days to eat better and I’m already feeling a difference.
Sunday: Eggplant & Barley CousCous
Monday: Leftovers
Tuesday: Chicken + Dumplings
Wednesday: Leftovers
Thursday: Braised chicken + Mushrooms with polenta
Friday: Either more leftovers or pasta with sausage, peppers, zucchini, eggplant, carrots (aka all the leftover veggies from the week)

After a busy week(end) of seeing tons of friends who were in town for our classmates’ wedding this weekend, I was pumped for a lazy Sunday (no PIBB or Red Vines for me though…reference, anyone?!)
As an aside, my friends’ had their wedding catered by Food Trucks…which was just plain awesome. I sampled:
Fins on the Hoof: Lamb sandwich = delicious
Old World Food Truck: I would hunt this place down again just to eat the chicken schnitzel…winner of the night in my opinion. The latkes weren’t bad either.
And no wedding would be complete without cake (or cupcakes as the case would be) brought from Kara’s Cupcake Truck! I’m a sucker for cream cheese frosting, so my favorite was the carrot cake.
Which leads me back to my lazy Sunday. I had aspirations to cook dinner this evening…but earlier today was convinced to eat at the new Roam Burger place in my hood. I got the original burger and it was like an upscale version of an In and Out burger aka awesome…and quite frankly, I am still stuffed 6 hours later. Therefore, no cooking tonight…perhaps just a snack.
For the rest of the week:
Monday: Dinner out with a friend (I think we’re getting salads…much needed after this weekend!)
Tuesday: Asian Spinach Salad
Wednesday: Quinoa with Sweet Potato, Pesto and Kale
Thursday: Leftovers
Friday: Friend’s Birthday - dinner TBD

The days are slipping by…how is it already mid-August? This weekend was pretty excellent.
Friday night drinks and dinner with the ladies and hiking + beers in Marin on Saturday. And today? Today has been for errands, and perhaps a run in the late afternoon. And some thinking. I haven’t had time to myself to think lately.
Sunday: Steak sandwiches with the leftover carne asada ETA: Japantown dinner with my cousin who happens to be in town. Steak for lunch tomorrow!
Monday: Both out
Tuesday: African Sweet Potato Soup with Black Beans
Wednesday: Chicken Fajitas
Thursday: Leftovers of sorts
Friday: Off for the weekend to celebrate two of my friends getting hitched!

Another week, another menu!
Super busy week coming up. I made a big pot of risotto with spring veggies this afternoon because between work/personal commitments, the boy and I likely won’t be seeing each other much. This also means he’s likely to eat something better than a bowl of cereal for dinner.
Sunday: Leftover proscuitto pizza from last night!
Monday: Out of me, risotto for the boy
Tuesday: TBD…either pork loin + green beans or out for me and risotto again
Wednesday: Out for the boy, risotto for me
Thursday: Either that pork loin or Carne Asada + arugula/beet salad
Friday: Carne Asada

It was a pretty low key but excellent weekend…enjoyed Homemade Pretzel Rolls + The Dark Knight Rises.
Somehow it’s Monday already and I have a massive headache…let’s hope that’s not foreshadowing for the week. Nothing new on the menu this week, went with some delicious staples instead.

Tuesday: One Pot Kale + Quinoa

Phew…late again. This time due to an all-day Bridal shower on Sunday for a good friend. I had no idea her mother was such a good cook, I am still stuffed!
Sunday: Bridal shower noms - including salmon, spinach salad, wild rice, stuffed mushrooms, shrimp, tiramisu…and homemade truffles to take home as the party favor…yeesh!
Monday: Breakfast for dinner
Tuesday: Turkey meatloaf with green beans (no, it never got made last week)
Wednesday: Leftovers
Thursday: Pasta with sausage, basil and mustard
